Fried green tomatoes with corn and Alaskan King Crab

TRENT BISSELL OF WHOLE FOOD'S Fried green tomatoes with corn and Alaskan King Crab

4 oz. cornmeal
2 oz. all purpose flour
1 tsp. cayenne
1 tsp. paprika
4 oz. buttermilk
1 green tomato cut in slices

1 shallot diced
2 cloves garlic diced
1 ear of corn with kernels removed
4 oz. cherry tomato cut in half
5 oz. Alaskan king crab
1 tbsp. tarragon
1 oz. butter
1 oz. champagne
1 lemon juiced
Salt and pepper to taste
Canola oil to fry

Soak your green tomatoes in buttermilk for 20 minutes. Mix cornmeal, flour, cayenne, paprika and salt and pepper.
Next dredge your tomatoes in the dry mix and fry about 3 minutes each side until golden brown. Pat dry

Sautée shallot and garlic in canola oil until translucent. Next add in your corn and tomatoes. When thoroughly cooked, deglaze with champagne. Add in crab, butter and tarragon. Finish with lemon, salt and pepper and pour over green tomatoes. Enjoy!
