Chef Bob's smoked pork tenderloin salad with strawberry vinaigrette

1 pork tenderloin trimmed of fat and sinew
½ teaspoon Salt, ½ teaspoon pepper, ½ teaspoon cumin, 1 Tablespoon oil
Rub tenderloin with above mixture and smoke over wood chips for 30-45 minutes or until internal temperature is 150 degrees. Allow to cool, then slice.
1 pint strawberries (sliced)
1 small onion (sliced)
2 Tablespoons olive oil
2 Tablespoons honey
2 Tablespoons apple cider vinegar
½ teaspoon ground coriander (optional)
Salad Greens
2 cups watermelon
Sauté onions & strawberries in oil. Add vinegar, add honey, add salt, pepper and coriander. Arrange Salad greens, watermelon and sliced pork tenderloin on a platter. Top with warm strawberry vinaigrette.
