Cosmo's Pizza Chocolate Mousse
8 oz. semi-sweet chocolate morsels
1 Tbsp. vanilla extract
3 cups heavy whippping cream
1/4 tsp. instant espresso
8 eggs, separated
1 Tbsp. white sugar
1 pinch salt
Combine morsels, vanilla, 1 cups heavy whipping cream and instant espresso and melt over a double boiler. Stir to combine evenly.
In a medium bowl, whip 2 cups of heavy whipping cream to soft peaks and set aside.
In another bowl, beat 8 egg yolks and sugar together until light in color and a ribbon holds its shape. Then, fold warm chocolate mixture into yolks and sugar.
In another bowl, whip egg whites and salt together until soft peaks form. Fold into chocolate mixture.
Finally, fold in the reserved whipped cream.
