Noon cooking May 31, 2013 - All Around Town Catering Super Tacos with portobello mushrooms

AATC's Portobello Mushroom Super Tacos


4 Portobello mushroom,cleaned and sliced

2 Tbsp olive oil

1 cup sweet peppers,diced

1/2 cup red onion,diced

1 clove garlis,minced

1 cup shredded lettuce

1 1/2 cups black beans,seasoned and simmered

1 cup pico de gallo

2 Tbsp tequila

8 corn tortillas,warmed in oil

1/2 cup shredded cheese[Optional]


Heat oil in pan,and heat tortillas for 15 seconds on each side.Set aside and put cheese between the tortillas.Have your black beans simmering.Add a bit more oil and add mushrooms,peppers,and onions,and garlic.Suate for about 3 minutes,add tequila to deglaze.May flame up so be careful!Take your lettuce and start building your Super Taco.First ingredient to go on your tortilla is lettuce,followed by black bean mixture.Then you want to top that with mushroom mixture,followed by pico de gallo.Garnish with cilantro,and you have a Super Taco!Enjoy with your favourite beverage[Sangria would be great]!!!
