John's City Diner Not-Your-Mama's Macaroni & Cheese

Cheese Sauce

Ingredients

¼ pound Butter

½ cup Flour

2 quarts Milk

2 quarts Heavy Cream

1 each Large onion, small diced

1 pounds Smoked Gouda

2 pounds Cheddar, grated

½ pound Parmesan cheese, shredded

1 tspn Cayenne pepper

3 each Bay leaves

¼ Cup White Wine

Method

Melt butter in a small stock pot, add onion and sweat for 1 to 2 minutes. Add flour and develop a pale roux.

Whisk in milk and allow to thicken slightly

Add heavy cream and bring to a simmer.

Add bay leaves

Slowly incorporate cheddar and smoked Gouda cheeses until melted and blended thoroughly. Slowly add parmesan cheese until a creamy consistency is reached.

Add white wine and cayenne pepper, simmer for 5 minutes.

~Boil pasta following package instructions

~Fold cheese sauce into cooked pasta

~Fold in shaved prosciutto

~Top with Japanese breadcrumbs

~Bake at 350 degrees in non-stick baking pan

~Remove and let rest

~Garnish with scallions and diced tomatoes
