Shaved spicy pork loin with a summer pea salad

Trent Bissell of Whole Food's Shaved spicy pork loin with a summer pea salad

1 1/2 pounds pork loin
2 tbl. Paprika
2 tbl. Cayenne
2 tbl. Crushed red pepper
2 tbl. Chili powder
Salt and pepper to taste
4 tbl. Canola oil

Mix together all dry ingredients, mix in oil and mix to a paste. Run all overpork loin and roast on 375 for 25 mins, or until desired doneness. Let rest and cool.


1 pound cooked shell peas
3 heirloom tomatoes diced
1 ear of corn with kernels removed
1 peach diced
1/2 poblano pepper diced
1 shallot julienned
2 oz. muscadine juice
2 oz. olive oil
2 oz. fresh basil

Cook shelled peas until tender and cool. Next sautée corn and poblano until tender also. Once everything is cooked off, mix together all ingredients until well incorporated. Plate with your salad in the plate and slice the pork thinly and fan around the salad.
