Your choice of pie pastry dough
4 cups of fresh peaches (pitted, peeled, and sliced)
1 cup sugar
4 Tbsp Peach Gelatin
½ -1 cup water
1tsp Vanilla Flavoring
¼ stick Butter
Sugar to spinkle on top
Cut pastry dough to fit desired dish. Take scrap pieces of dough and place on a baking sheet, bake in oven on 325 degrees until lightly brown. Allow dough pieces to cool completely.
Spray pan with nonstick cooking spray. Crumble baked dough pieces in bottom of dish until you have a nice base layer. Pour peaches directly over base. In a bowl mix sugar and peach gelatin together. (Be sure to mix dry ingredients before adding wet ingredients.) Add ½ - 1 cup of water (depending on your desired consistency of the cobbler) and mix completely. Add vanilla flavoring and mix. Pour mixture evenly over peaches. Cut ¼ stick butter into small slices and place evenly over peaches.
Place pastry dough, that you have previously cut out to fit dish, on top. Using a knive cut off any sides that may not fit just right. Brush egg whites over the top of the dough (this allows the cobbler to cook to a golden brown color). Sprinkle sugar over the top of the cobbler. Using a knive cut air holes into the dough on top of the cobbler (this allows air down into the cobbler allowing it to cook evenly).
Bake on 325 degress for 15-20 minutes or until golden brown.
