Angela's Silverdollar Cran-Orange Pancakes

· 1 ½ cup of All-purpose Flour
· 1/2 cup of white corn meal
· 2 t of baking powder
· 2 t of gradulated sugar
· ½ t baking soda
· Pinch of cinnamon
· Pinch of Salt
· 2 Large Eggs
· 6 oz of Orange Juice
· 2 t Zest of Orange
· 1 cup of milk
· 4 T of melted butter
· 1 cup of Dried Cranberries
Orange Sauce
· 1 cup of orange juice
· Zest of 1 orange
· 4 T of Sugar
· 1 T of butter
· 2 leaves of Basil
Combine dry ingredients and stir with wooden spoon. In another bowl whisk eggs, oj, zest, milk, and melted butter. Stir wet ingredients into the dry until blended. Fold in cranraines. Coat skittle with oil place over med. Heat…scoop out batter with small icecream scoop and let cook on each side for 1 min or longer. Orange sauce is to mix oj and sugar in sauce pan let simmer for 15 min. Stir occasionally until thick…when reduced add butter and zest. Let cool and serve with pancakes.
