Basmati rice with mushrooms and onions

All Around Town Catering's Basmati Rice with Mushrooms and Onions

1 cup Basmati Rice

2 cups chicken stock

3 Tbsp butter

2 Tbsp olive oil

1 cup sliced mushrooms

1/2 cup sliced onions

Pinch of saffron[Optional]

1/2 cup sherry

Pinch of salt and pepper

 

Heat oil in saute pan. Saute mushrooms and onions in butter and olive oil. Heat oil in saucepan. Add rice and brown,adding chicken stock 1/2 cup at time, then the sherry, salt and pepper. Stir this mixture and cover for ten minutes, checking it every five and adding a bit more stock if needed. The moisture will go away at low heat. Serve with chicken or by itself with a nice salad. Enjoy!!!
