Honey Jack chicken with cucumber salad

All Around Town Catering's Honey Jack Chicken with Cucumber Salad

 

4 boneless, skinless chicken breasts

1 Tbsp olive oil

1/4 cup honey bourbon

2 Tbsp Mojo marinade

1 Tbsp lime juice

1/8 cup fresh cilantro

 

Cucumber Salad

1 cucumber, peeled and sliced thin

1/4 cup red onion, sliced thin

1/4 cup red pepper, sliced thin

1/4 cup rice vinegar

1/2 tsp salt

Few slices of jalapeno pepper

 

Marinate chicken for as long as overnight, but an hour will do. Go ahead and prepare cucumber salad by combining all ingredients and refrigerating it. Heat oil in skillet [Or grill] and cook chicken for about three minutes on each side. It should brown nicely with the bourbon marinade. Serve with beans and cucumber salad; it is very refreshing.
