Turkey Leg Recipe

Turkey Legs as well as many other foods are made better by the brining process including cheese. Brining adds flavor, tenderness , reduces cooking times and eliminates having to add salt when eating.
The salt through osmosis traps water molecules and holds them during the cooking process. The brine that Bob Sykes used this morning is as follows:
4 Quarts water
1 cup Kosher Salt
1 cup white sugar
1 cup brown sugar
2 tablespoons seasoning blend
1 whole Bay Leaf
Bring the ingredients to a boil and then cool. Once cooled add add turkey legs.Cover and submerge in the brine for at least 6 hours
Pat dry; rub with dry rub making sure to get some under the skin.
Roast on sheet pan for 20 minutes then lower the temperature by half and cook another 30 minutes.
To cook on the grill; place on the top rack with medium heat for 45 minutes or until thoroughly done 170 degrees.
Serve with your favorite BBQ Sauce.
