Silvertron Cafe's penne pasta tossed in a roasted fennel and Italian sausage creamy white wine sauce
2 small Italian sausage links (not spicy)
1 cup cream
1/4 cup dry white wine
salt and pepper
1/3 cup of parmesan
Slice the fennel and toss it with a little bit of olive oil. Place it on a baking pan, add salt and place it in oven (350) until roasted (45 minutes, BUT all depends how big are the slices - keep checking).
In the mean time, chop the sausage links in small pieces. In a sautéed pan, add oil, and place it on medium heat. Add sausage pieces, salt and pepper and cook it all the way through. Once cooked add roasted fennel and sauté for a minute. Add white wine and let it reduce. Add cream, salt and pepper and let it cook until it thickens. In the meantime cook the pasta and drain it. Toss the pasta with the sauce in the skillet for a minute or so and serve. Top with parmesan and buon appetito.
