Pumpkin chocolate chip cookies (vegan)
½ cup pumpkin puree
½ cup veg oil
½ cup granulated sugar
½ cup brown sugar
¼ teaspoon salt
½ teaspoon vanilla
½ teaspoon of pie spice
1 teaspoon baking powder
1 teaspoon baking soda
1 ½ cups all-purpose flour
½ cup chocolate chips
1). Mix oil, pumpkin, sugars, and spices for 1 minute on medium speed.
2). Sift together the flour, baking powder and baking soda and add this to the pumpkin mixture.
3). Stir in the chocolate chips.
4). Bake at 325 degrees F. for 10 minutes or until done.
5). Approximate yield is 2 dozen cookies. Enjoy with hot cocoa!
