Pork Marsala  with sautéed Potatoes

4 Pork Cutlet 2 oz each

1/2 cup diced mushroom

3/4 cup whipping cream

3/4 cup Marsala wine

3/4 cup chicken broth

1/4 cup Unsalted butter small chunks

3/4 cup flour

2 eggs

2cups cook potatoes diced

1/2 cup slice onions

Onion powder to taste

Salt & pepper to taste

Olive oil

Seasoning pork cutlet with salt, pepper and onion powder. Dip cutlet in flour and eggs. Heat sauté pan, add oil and place cutlet in pan. Sauté 5-8 minutes. Remove cutlets and place on plate. Add onions and mushroom sauté 2-4 minutes, deglaze pan with wine 1-2 minutes add chicken broth and cream.  Sauté 3-5 minutes, remove from heat and add  butter.

Sautéed Potatoes

Place potatoes in boiling water,  cook to fork tender. Drain potatoes, heat sauté pan,  add oil, onions and potatoes. Seasoning with onion powder, salt and pepper  sauté 4-8 minutes. Place potatoes and pork on plate top with sauce and garnishes with green onion.
