SUR LA TABLE'S PROSCIUTTO AND HONEY MUSTARD PALMIERS
PALMIERS ARE BEAUTIFUL, ADDICTIVE, EASY TO MAKE AND LOVED BY EVERYONE. NAMED (IN FRENCH) FOR THEIR RESEMBLANCE TO A PALM FROND, THEY ARE ALSO CALLED ELEPHANT EARS OR BUTTERFLY WINGS. TYPICALLY, THEY ARE SIMPLY PUFF PASTRY THAT IS ROLLED OUT IN SUGAR RATHER THAN FLOUR, THEN FOLDED WITH ADDITIONAL SUGAR, THINLY SLICED AND BAKED. BECAUSE THEY ARE SLICED AND LAID CUT SIDE DOWN ON THE BAKING SHEET, THEY EXPAND SIDEWAYS INSTEAD OF UPWARD, RESULTING IN "EARS" THAT SHOWCASE THE MANY LAYERS CONTAINED IN THE DOUGH. IN THIS RECIPE, WE'VE MADE A SAVORY VERSION BY FILLING THE PASTRY WITH HONEY MUSTARD AND PROSCIUTTO BEFORE BAKING.

YIELD: 20 PALMIERS
1 SHEET COMMERCIAL PUFF PASTRY, THAWED
2 TEASPOONS DIJON MUSTARD
4 TABLESPOONS HONEY
2 ½ OUNCES THINLY SLICED PROSCIUTTO
3 TABLESPOONS GRATED PARMESAN CHEESE, DIVIDED
1 LARGE EGG YOLK, BEATEN WITH 1 TABLESPOON WATER

PREHEAT OVEN TO 400 DEGREES AND PLACE A RACK IN THE CENTER.
USE A ROLLING PIN, ROLL THE PASTRY TO A 6X4 INCH RECTANGLE. TRIM UNEVEN EDGES WITH A SHARP KNIFE.
IN A SMALL MIXING BOWL, USE A SILICONE SPATULA TO COMBINE MUSTARD AND HONEY AND BRUSH EVENLY OVER THE PASTRY. COVER WITH PROSCIUTTO SLICES AND SPRINKLE WITH TWO TABLESPOONS OF PARMESAN CHEESE.

TIGHTLY ROLL THE LONG SIDE OF THE PASTRY HALF WAY TO THE CENTER, THEN TURN AND ROLL THE OTHER LONG SIDE TO MEET IN THE CENTER OF THE PASTRY. REFRIGERATE UNTIL FIRM, ABOUT 20 MINUTES.

USING A SILICONE PASTRY BRUSH, COAT THE PASTRY WITH THE BEATEN EGG YOLK ON ALL SIDES. CUT PASTRY ROLL CROSSWISE INTO ½ INCH THICK SLICES. PLACE SLICES ON A RIMMED BAKING SHEET LINED WITH PARCHMENT PAPER. PLACE IN PREHEATED OVEN AND BAKE UNTIL CRISP AND GOLDEN, ABOUT 10 MINUTES. REMOVE FROM OVEN AND IMMEDIATELY SPRINKLE REMAINING PARMESAN OVER THE PALMIERS. TRANSFER TO A WIRE RACK TO COOL. SERVE WARM OR AT ROOM TEMPERATURE.
