Asparagus and Parmesan salad with poached egg

1 bunch of asparagus cooked
1 small head of red leaf lettuce
1 small bunch watercress
1 shallot roasted or sautéed
1 Parmesan crisp
1 oz shaved Parmesan
1 egg poached
1/2 lemon juiced and zestos
1 oz extra virgin olive oil
Salt and pepper to taste

Cook your asparagus either by steaming,sautéing or grilling. And mix with the greens and shallot. Toss with lemon juice,zest and olive oil. Season with salt and pepper and plate. Poach egg in sauce pot until white is cooked. Place Parmesan crisp on top of salad and then poached egg on top of it. Sprinkle shaved parm on top and season egg. Enjoy this easy and delicious salad!
