Whole Foods Southern Pork Ragu with Mcewen and Sons Grits
1 cup grits
2 cups water
2 cups cream
2 tablespoons butter
1 pork tenderloin 1 small onion, chopped
2 stalks of celery, chopped
1 carrot, chopped 1 garlic clove, minced salt and pepper 2 tablespoons olive oil 1 small pat butter 1 large can whole tomatoes, with juice 1 cup red wine 5 sprigs fresh thyme 5 leaves fresh sage Small handful of fennel seeds Freshly grated Parmesean
To cook grits boil water and cream, once boiling add in grits and whisk until grits are cooked through. Add the butter and season to taste.
Brown the pork in pan with oil. Once browned pull out and put in veggies and cook until brown around the edges, once this is done, deglaze with red wine and add back in the pork. Add in the tomato, herbs, fennel seeds, salt and pepper. Simmer the ragu until the pork is tender and top the grits, then sprinkle with parmesan cheese and enjoy!
