Blue Cheese Kofta with Sweet Potato- Yogurt Dipping Sauce
 
1.5# Ground Beef
3 cloves garlic minced
5 oz. crumbled blue cheese
3 eggs beaten
8 oz. panko bread crumbs
1 oz. basil shredded
1 oz. thyme
1 oz. chives
.5 oz. sugar
.5 oz. paprika
Salt and pepper to taste
 
2 medium sweet potatoes peeled and diced
1 oz. cinnamon
16 oz. greek yogurt
Juice of 1 lemon
Salt and Pepper to taste
 
Mix together all ingredients with beef and let sit for 30 minutes to let flavors meld. Next roll into .5 oz. logs. Sear them in a hot pan, and press down to form an egg type shape. Sear on both sides  and stick with skewer and finish in oven until internal temp of 160 degrees.
 
For the dipping sauce, boil the sweet potato until tender and puree with greek yogurt until smooth. If needed add more yogurt once blended. Mix in cinnamon and salt and pepper and serve at your favorite tailgate or party!
