Whole Foods Priosciutto Pressed Chicken with Alabama Peach Salad

Prosciutto Pressed Chicken with Alabama Peach Salad
 
4 skinless-boneless chicken breasts split in half
8 slices prosciutto
3 Peaches diced
1 bunch radishes diced
1 seeded cucumber diced
1 red bell pepper diced
½ red onion diced
4 T mint minced
2 lemons juiced
2 T Olive oil
1 handful arugula
Salt and Pepper to taste
 
For the chicken take the breasts once they are split and season lightly with salt and pepper and press 1 slice of prosciutto per chicken breast. Sear the chicken prosciutto side down first on a medium high pan until its golden brown, flip over and cook the remainder of the way. For the peach salad, dice up all of your ingredients and toss with lemon juice, olive oil, mint and arugula. Season to taste and lay on bottom of plate and place chicken on top!  Enjoy!
