Salsa Senorita Stuffed Avocado with Black Bean and Corn Relish

Ingredients

  • 11/2 cups seeded tomato
  • 1/3 cup thinly sliced green onion
  • 2 tablespoons chopped fresh jalapeño
  • 2 tablespoons chopped cilantro
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground cumin
  • 1/8 teaspoon pepper
  • 1 garlic clove, minced
  • 1 can sweet corn drained
  • 1 can black beans drained
  • ¼ to ½ cup Salsa Senorita any variety
  • 4 ripe avocados

Directions:

Combine all ingredients  except avocados in a bowl.  Cover and chill.  Relish can be made up 2 to 3 days prior to serving.  Peel and cut Avocado in half; remove seed.  Place relish inside avocado.  Option:  Great on grilled chicken and fish.
