Whole Foods Frittata with Shrimp, Spring Onions and Asparagus

Frittata with Alabama Shrimp, Spring onions and Asparagus

12 eggs shelled and scrambled
4 oz. heavy cream
2 spring onions julienned
1 bunch of asparagus cut into small pieces
1/2 pint cherry tomatoes
6 oz. peeled and deveined shrimp
1 oz. thyme chopped
Salt and pepper to taste
3 oz. grated parmesan

Start by sautéing tomatoes, onions, and asparagus in a 12 inch cast iron skillet. Once the tomatoes and asparagus are soft, add in the shrimp. Season with salt and pepper and cook the shrimp 1/2 way. Next mix your eggs and cream together and pour into pan and mix together everything so it is evenly distributed. Sprinkle parmesan on top and put into a 400 degree oven for 7-10 minutes or until eggs are fully cooked. Sprinkle with extra parmesan on top if desired and serve immediately!
