Angela's Fit2Eat Seared Tuna and Vegetable Red Quinoa

· ½ cup of dried red quinoa (toasted for 4 min. @ 350)
· 6oz portion of Tuna (raw)
· Salt & Pepper to taste
· ½ cup of Cauliflower (sliced into florets)
· ¼ cup of zucchini (cubed)
· ¼ cup of squash (cubed)
· 2 cloves (minced)
· Soy sauce to taste
· 1 T olive oil
· ¼ onion (diced)
· T of Sesame Seeds
· Zest of 1 lemon
· ½ T of rice wine vinegar

Cook quinoa in boiling salted water and let simmer for 15 min. strain over sink and set aside. Salt and Pepper tuna on both sides add zest of one lemon. Sear on high heat with ½ T of olive oil for 2 min. on each side. Sautee garlic, onion, and sesame seeds with a ½ T of olive oil. Cook until all ingredients are brown. Then, add zucchini, squash, and cauliflower. Finish cooking veggies for 3-5 min. Then, add rice wine vinegar, soy sauce, and red quinoa. Place tuna on top of veggie quinoa, and enjoy!
