Curry chicken with cucumber salad

Angela's Fit2Eat Curry Chicken with Cucumber Salad

1 large chicken breast
1 large cucumber (peeled and sliced)
T of salt
Curry Powder (celery seed, tumeric, cayenne, fennel, ground mustard seed, and ginger) - teaspoon of each
T of balsamic vinegar
T of honey
T of oil
Salt and Pepper to taste
2 cups tomatoes
2 T of shredded cheese

In a large skillet, oil pan and turn up heat til smoking point. Season chicken breast with curry mixture and salt. Place into pan and cook on each side for 3-4 minutes til skil is crispy. Place in oven for 10 minutes to finish. In a small mixing bowl, combine honey, vinegar, and salt. Add cucumbers and tomatoes, toss in mixutre. To finish, add shredded cheese. Enjoy!
