Ingredients

 

 4 each                  Whole Smoked Tomatoes, drained

 

10 each                 Roasted Garlic Cloves

 

½  Cup                 Olive Oil

 

½  Cup                 Almonds

 

2 tspn                            Ancho Chili Powder

 

2 tspn                             Kosher Salt

 

2 tspn                            Cumin

 

2 tspn                            Red Wine

 

2 tspn                            Apple Cider Vinegar

 

 

 

Method

 

Smoke the tomatoes for 3 hours at 225. Roast in the oven for 2 hours at 300 if you do not want to smoke them.

Peel and strain off excess liquid from the tomatoes.

Roast garlic cloves for 30 minutes at 300 or until soft.

Place all ingredients except the olive oil in a blender.

Slowly pour in the olive oil with the blender at medium speed.
