Mustard Braised Pork Belly

 

-1 piece of pork belly

-turnip greens

-tomatoes

-1 can blacked peas  

-jalapeño

-half cup bread crumb

-tblsp flour

-tblsp parsley

-3 tblsp soft cheese

-1 egg

-chicken stock

-1 orange pepper

-dijon mustard

 

Pork Belly: 

Rub pork belly with dijon mustard place in chicken stock for 4 hours. Rest for four hours then cut into four oz. pieces. Sear pork belly in covered hot pan with molasses and place into oven until internal temp reaches 165. In another pan, heat turnip greens and oven roasted tomatoes until hot.

 

Black eyed pea cake: 

1 small can of black eyed peas, 1 Tbsp of flour, half a cup bread crumbs, diced orange pepper, 1/2 diced jalapeño, tblsp parsley, 3 tbsp soft cheese    and an 1 egg. Mix well, dredge in flour then pan sear. 

 

Combine pork belly with black eyed pea cake and enjoy!
