Salmon Croquettes

Half medium onion, diced

Half medium bell pepper, diced

Complete contents of one 15 oz can salmon

1/4 C SR cornmeal

1/4 C SR flour

1 egg

2 Tablespoons mayonnaise

1 C panko bread crumbs

2 teaspoons chopped fresh parsley

3/4 teaspoon Creole seasoning

Combine all ingredients in the mixer with a dough hook until smooth.

Form into 1 1/2 " balls using a 2oz. disher

Deep fry at 350 degrees for 5-7 minutes until golden brown.

Serve with fresh lemon wedges and Irondale Café remoulade.

Can also be formed into patties and cooked in a lightly oiled skillet over medium high heat
