Angela's Fit2Eat Chicken Quesadilla with Pico Di Gao

•    1 cup of cooked roasted chicken
•    ½ cup of cherry tomatoes (sliced)
•    ½ of Yellow bell pepper (diced)
•    ¼ of a yellow onion (diced)
•    3 T of shredded cheese (cheddar or provolone)
•    2 wheat tortillas
•    ½ T of cumin
•    ½ T of paprika
•    ½ T of coriander
•    ½ t of crushed red pepper
•    2 T of your favorite Pico Di Gao
•    1 T of oil
•    T salt


In a skillet on med. Heat, T of oil, bell peppers, onion, tomatoes. Sautee for 2-3 minutes until caramelized. Add cooked chicken, then add cumin, paprika, coriander, salt, and crushed red pepper. Incorporate spices in skillet for 1-2 minutes. In separate skillet on med heat, add tortilla flat, on one half of the tortilla add cheese and stuffing. Fold over other half of tortilla and flip once cheese is melted. Cut in half and serve!! Enjoy!!
