Chef Donnell Johnson's Swiss Mushroom Chicken Sandwich

2 6oz chicken breasts/cutlets
1 cup of sliced mushrooms
1/2 cup onions
4 leaves of Romaine lettuce
Swiss cheese slices (2 slices per sandwich) Salt, pepper and onion powder to taste
2 tsp of soy sauce
2 tbsp of unsalted butter
2 hamburger buns

Season chicken with salt, pepper, onion powder and soy sauce. Place chicken on grill and cook to 165 degrees Fahrenheit. Remove from grill and place cheese slices on top. Heat sauté pan add butter, onions and mushrooms and season with salt pepper, onion powder and half a teaspoon of soy sauce, sautéing for 2-3 minutes. Spray grill with vegetable/olive oil cooking spray, season Romaine lettuce with salt and pepper, place on grill and cook for 1-2 minutes. Finally, assemble sandwich; after heating buns, place Romaine lettuce on the bottom bun, then chicken previously topped with cheese and lastly, top with sautéed mushrooms and onions and serve.
