Wendy Cruse's stuffed summer zucchini

1 medium zuccini or eggplant, hollowed out on the side

1/4 C cooked lentils

1 small ear sweet corn, cut off

4 or 5 okra, diced

1/2 or 1/4 of tomato, diced

1 T olive oil

1 egg

1 clove chopped garlic

salt and pepper

1 T chopped parsley, basil or herb

 

Saute corn, okra, garlic and tomato in olive oil for about 5 minutes. Add to lentils and egg. Mix well. Pour into cavity of zucchini.
